Ingredients
For the Pastry Choux
70g of Butter
3g of Salt
90g of Water
90g of Milk
105g of Bread flour
150g of Whole Eggs
For the Craquelin
80g of Butter
100g of Brown Sugar
100g of Cake Flour
For the Filling
15g of Fruit Me Up/piece
For the Pastry Choux
Bring butter, sugar, salt, and water to a boil in a medium saucepan. Remove from heat, and use a wooden spoon to quickly stir in flour. Cook the mixture in medium-high heat and stir constantly until the mixture pulls away from sides and film forms on the bottom of the pan, about 3 minutes.
Transfer to the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until slightly cooled for about 1 minute. Raise the speed to medium and add your eggs, 1 at a time, until soft peaks form when you touch the batter with your finger.
For the Craquelin
In the bowl of a stand mixer with the paddle attachment, beat the brown sugar, flour, and batter on medium-low speed until no dry floor remains and a damp, crumbly meal has formed. This usually takes 2 minutes.
Shape the dough into 15-20 cm flat rectangles. Stamp out 18 pieces of craquelin with a 5 cm round cutter
Baking
Fill your pastry bag with choux and pipe it 5 cm wide at a 90° angle. Top each choux with a craquelin cut.
Bake at 170°C for 20 minutes, until puffed and golden brown.
Filling
With a piping bag, fill the bottom half of each choux with Fruit Me Up. Cover with the top half of each choux.
